Cake with spices
Ingredients
- 500 g flour
- 300 ml of milk
- 125 g butter
- 6 yolks
- 150 g of sugar
- 100 g orange peel candied fruit
- 40 ml vodka
- 20 g fresh or 10 g dry yeast
- 0.3 tsp. ground cloves and grated nutmeg
- 1 tsp. ground cardamom and cinnamon
- a pinch of saffron strands
- 150 g icing sugar
- 1 egg white
STEP-BY-STEP COOKING RECIPE
Step 1
Pour the vodka over the saffron. For dough (sourdough), heat milk to 36–38 ° С, add yeast and stir until smooth. Add half the flour and knead thoroughly. Cover and leave in a warm place for 1 hour.
Step 2
Whisk the yolks with the sugar until white, add the saffron vodka and ground spices. Stir this mixture into the dough along with the remaining flour. Stir first with a spoon, then with your hands for 10-15 minutes.
Step 3
Melt and cool the butter, add to the dough. Continue kneading for another 10-15 minutes. Add chopped candied fruits and knead for another 15 minutes. Cover the bowl with the dough and leave to rise for 2 hours. During this time, knead the dough twice.
Step 4
Preheat oven to 180 ° C. Divide the dough into the cake tins so that it takes up no more than half the volume in each tins. Let rise, 20-30 min. Bake until tender - the cakes should rise strongly. If you pierce the finished cake with a wooden skewer, it will come out dry. Cool the Easter cakes by laying them on their sides on a towel-covered pillow.
Step 5
For the icing, mix the icing sugar with the egg white, quickly coat the cakes and decorate to your liking until the icing has set.
