Crispy champignons with aioli sauce and truffle oil
Ingredients
- 400 g fresh medium-sized champignons
- 100 g flour
- 2 eggs
- 130 g bread crumbs
- 40 g parmesan
- vegetable oil for deep fat
- 1 tsp truffle oil
- a few sprigs of parsley
- salt
- 100 g homemade mayonnaise
- 2 cloves of garlic
- 1 tsp lemon juice
- salt pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Cut the champignons in half. Prepare three bowls: with flour mixed with salt, beaten egg and bread crumbs. Dip the mushrooms first in flour, then in an egg and breadcrumbs. Shake off the excess.
Step 2
For aioli, pass the garlic through a press, add to the mayonnaise. Add lemon juice, salt, pepper and stir.
Step 3
Transfer the mushrooms to a plate, sprinkle with grated Parmesan, chopped parsley and drizzle with truffle oil. with aioli.
