Eggplant stuffed with vegetables

Ingredients
- eggplant 3 pcs.
- sweet pepper 1 pc.
- hot pepper 1 pc.
- tomato 2 pcs.
- onion 1 pc.
- garlic 5 pcs.
- vegetable oil 4 tablespoons
- mixture of herbs 1 tsp
- greens 1 bunch (s)
STEP-BY-STEP COOKING RECIPE
Step 1
Let's get started. Cut off the eggplant skin in strips to make it look like a zebra. We cut it in half lengthwise. We take out the pulp with a teaspoon and put it aside, it will come in handy for us. Grease the eggplant halves with oil and set aside for now.
Step 2
Finely chop the onion and set to fry until soft. Cut the Bulgarian and hot peppers into very small cubes. Chop the garlic finely. Scald the tomatoes with boiling water, remove the skin and chop finely. Grind the eggplant pulp in a blender or finely chop it.
Step 3
Add eggplant pulp, garlic, pepper and tomatoes to the pan to the onion. Stir and fry for 5 minutes. Finally, add pepper and spices.
Step 4
Now fill the eggplant boats with the mixture. Put in a baking dish, if there are green tails, wrap them in foil so as not to burn out. We put in a preheated oven for 30 minutes.
