Espresso sweets

Making sliced chocolates is easy enough if you already have experience making chocolates at home. Espresso sweets will be an ideal addition to a cup of aromatic morning or afternoon coffee and will give you not only a good mood, but also a boost of vivacity.

Ingredients
  • 300 g chocolate 54% cocoa
  • 200 g milk chocolate
  • 100 g cream, 35% fat
  • 20 g coffee beans
  • 20 g glucose
  • 80 g milk chocolate
  • 80 g hazelnut praline
  • 80 g waffle crumbs

STEP-BY-STEP COOKING RECIPE

Step 1
Mix the cream with the coffee beans 24 hours before preparation and leave until use.
Step 2
For ganache with coffee, melt 200 g of chocolate.
Step 3
Mix the cream with glucose and bring to a boil. Strain by removing coffee beans. Pour cream into melted chocolate. Punch with a hand blender.
Step 4
Pour the chocolate mass into a special frame. Leave to crystallize for 2–3 hours.
Step 5
For the praline ganache, melt the chocolate. Toss with praline and waffle crumbs. Knead the resulting mixture and place on the coffee filling. Leave to crystallize at 12-14 ° C, 12 hours. Cut into 1/2-inch cubes.
Step 6
Temper the chocolate to cover. Put the prepared candy on a fork and glaze the candy. Leave until the chocolate hardens completely.
