Fried barley with vegetables
Barley is often disliked for the fact that when boiling the grains secrete starch and become, as it were, a little slimy. Pre-frying removes this characteristic from the groats and gives them a pleasant nutty flavor.
Ingredients
- 250 g barley
- 1 large onion
- 2 medium carrots
- half a small celery root
- 4-5 cloves of garlic
- 2-3 sprigs of thyme
- vegetable oil
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Place the barley in a large, heavy-bottomed skillet. Do not add oil or water. Place over medium heat and fry, stirring frequently, until light brown, about 15 minutes.
Step 2
At the same time, bring 1 L of water to a boil in a large saucepan and season with salt. Stir in the fried barley, add the thyme, cover, and simmer while the rest is cooking.
Step 3
Peel the onions, carrots and celery, cut into 1 cm cubes. Chop the garlic. Fry vegetables in oil until golden brown, 10 minutes. Season vegetables with salt and pepper.
Step 4
Place the fried vegetables on top of the barley. Cover and simmer over low heat for about 20 minutes. Stir before serving, remove thyme.
