Fried navaga with potatoes in cream

Zharekha is a traditional dish for the Russian North, which is prepared from anything - potatoes, mushrooms, fish. Pomeranian roast is usually made from salted fish (cod or navaga) soaked before cooking - but can also be made from fresh.

Ingredients
  • 1–1.3 kg of weight
  • 1 kg of potatoes
  • 2 large onions
  • 100-150 ml of "House in the village" cream, 10-20% fat
  • melted butter
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Cut off the head and tail of the navaga, gut the fish, cutting the abdomen along the entire length. Spread the fish, salt and pepper on all sides, leave for 1 hour.
Step 2
Peel the onion and cut into quarters, not very thinly. Peel the potatoes and cut into 2 cm cubes. Fry the onions in ghee and salt separately until golden brown and the potatoes until golden brown, until half cooked.
Step 3
Preheat oven to 180 ° C. Place the potatoes in a heavy (preferably cast iron) skillet or dish. Place the onions on top of the potatoes.
Step 4
Simmer cavaga in a small amount of very mildly boiling water, 2 minutes. Place on potatoes with onions, drizzle with cream mixed with about 0.5 cups broth from navaga. Place in the center of the oven and bake for 25 minutes. Serve very hot.
