Ingredients
  • 70 g tempered chocolate 54% cocoa
  • 20 g cocoa butter
  • 200 g white chocolate
  • 55 g cream 35% fat
  • 20 g glucose
  • 60 g campari
  • 120 g grapefruit puree

STEP-BY-STEP COOKING RECIPE

Step 1
Melt the white chocolate for the filling. Heat the cream with glucose to a boil.
Step 2
Bring the puree to a boil.
Step 3
Add cream to the melted chocolate and mix well. Add puree and campari and mix thoroughly. Punch with a hand blender. Leave to crystallize at 12-14 ° C, 24 h.
Step 4
Decorate the molds with tempered cocoa butter (2 g). Let it crystallize, 5-7 minutes.
Step 5
Temper the chocolate for the body. Pour into molds, let excess chocolate drain and crystallize at 12-14 ° С, 2-3 hours.
Step 6
Put the filling from the pastry bag into the prepared cases. Leave at 12-14 ° C for 12 hours.
Step 7
Cover the bottom with freshly tempered chocolate. Remove the candy from the molds.
