Haydari

This dish is served everywhere and no feast is complete in Turkey without haidari. The thick sauce is made on the basis of suzma with garlic, mint and dill. Simply delicious!

Ingredients
  • yogurt (süzme) 300 gr
  • dry mint 1 tsp
  • olive oil 1 tbsp
  • garlic 2-3 cloves
  • dill 2 sprigs
  • feta cheese (or other pickled cheese) optional
  • grape vinegar 1 tbsp

STEP-BY-STEP COOKING RECIPE

Step 1
For haidari, it is recommended to use suzmu thick Turkish yogurt. Or yogurt, bought in a store, hang in gauze overnight so that the glass is extra liquid and the mass becomes thicker.
