Khachapuri on the grill

Suluguni is a pickled Georgian cheese from the Samegrelo region. It is with him that khachapuri is most often prepared. Andrey Zavarnitsin offers to cook khachapuri with suluguni on the grill.

Khachapuri on the grill
Ingredients
  • suluguni - 150 g
  • puff pastry - 125 g
  • wheat flour - 10 g
  • mazoni - 40 g
  • orange sauce - 40 ml

STEP-BY-STEP COOKING RECIPE

Step 1
Cut the suluguni into 5 rectangular barrels of about 30 g each (5 cm long, 2 x 3 cm wide, 3 x 3 cm high). Skewer the cheese diagonally longitudinally so that the cheese does not break.
Step 2
Puff pastry (half a plate of 250 g) cut in half into 2 equal rectangles and roll out in length (you will get rectangles 0.2 cm thick, 6-6.5 cm wide and 47-50 cm high).
Step 3
Wrap one layer of rolled dough around the overlapped suluguni and pinch the edges tightly. Then wrap the resulting structure with another layer of dough.
Step 4
Fry the cheese and dough skewered on the grill until golden brown and cooked.
Step 5
Serve on a wooden board with yogurt and orange sauce next to it.
