Lasagna from warm Italy

How nice it is to treat yourself to a slice of delicious lasagna on a cold cloudy autumn day. I don't know about you, but for me it is a real piece of sunny hospitable Italy.

Ingredients
  • for dough: wheat flour 400 g
  • olive oil 4 tablespoons
  • eggs 4 pcs.
  • for lasagna: parmesan 400 g
  • for béchamel sauce: flour 80 g
  • milk 700 ml
  • nutmeg 0.5 tsp
  • butter 120 g
  • salt to taste
  • for bolognese sauce: beef 500 g
  • carrots 1 pc.
  • olive oil 3 tablespoons
  • garlic 3 cloves
  • mint (fresh) 2-3 sprigs
  • dry red wine 250 ml
  • ground black pepper 1 pinch
  • oregano (dry) 1 pinch
  • salt to taste
  • fresh basil 2 sprigs

STEP-BY-STEP COOKING RECIPE

Step 1
Making bolognese sauce: The beef must be minced. Dip the tomatoes in boiling water for 2-3 minutes, this is necessary so that the skin comes off them easily. Then these vegetables also need to be minced. Peel carrots and onions. Then grate the carrots and chop the onion. Now sauté the vegetables in olive oil. Without turning off the heat, add the minced meat and fry for another 8-9 minutes. Then add the tomatoes and simmer a little more to evaporate the juice. Finely chop the garlic, chop the mint and basil. Add garlic, herbs and red wine to the minced meat. Add salt and dry spices at the very end. Simmer for another 5 minutes.
Step 2
Cooking the béchamel sauce: Melt the butter in a saucepan. The next step is to add the sifted flour. Make sure that there are no lumps, this mass needs to be stirred well. Now pour milk in a thin stream, remembering to stir all the time. Bring liquid to a boil, add nutmeg, salt and cook until thickened
Step 3
Preparing the dough - Take it out of the refrigerator, then for convenience it can be divided into several parts. Roll out the dough as thin as possible. You can cut it to fit standard lasagna sheets. It is 10x15 centimeters. Or you can roll out the dough sheets, the size corresponding to the bottom of your mold.
Step 4
Now grease a baking dish with olive oil or butter. We form and bake the dish. Spread the dough in the first layer, then grease it with béchamel sauce. To prevent the sheets of dough from being dry and tough, you can boil them a little. You can also use more sauce and cover the baking dish with foil.
Step 5
Next, add a layer of bolognese sauce and sprinkle with grated cheese. Then again a layer of dough, a layer of béchamel, a layer of bolognese and a layer of cheese. Make as many layers as you have enough ingredients. Preheat oven to 200 degrees and bake lasagne for 30 to 40 minutes.
Step 6
At the end, remove from the oven, cool slightly and cut into portions and lay out on plates.
