Oat waffles in an electric waffle iron
Oatmeal waffles are a hearty, tasty and healthy breakfast. They differ from ordinary wheat ones in their structure (denser and softer, not so airy). It goes well with honey or strawberry or peach jam. Served hot or warm
Ingredients
- Herculean flakes, large (for example, Yasno Solnyshko No. 1) 74 g
- premium wheat flour, sifted 51 g
- white sugar 23 g
- baking powder 0.5 tsp
- fine sea salt 0.5 tsp
- soda 0.25 tsp
- egg С 1 (or С0) 1 pc.
- butter 30 g
- kefir 1.5 or 2% 230 g
STEP-BY-STEP COOKING RECIPE
Step 1
Divide all ingredients into bowls for quick kneading of dough (kneading speed affects quality). This recipe doesn't need a mixer, just a hand whisk.
Step 2
Microwave the butter and melt (I usually set it for 30 seconds).
Step 3
Place a frying pan on medium heat (electric stove 3.5 out of 6) and heat (3-5 minutes). Add the rolled oats and, stirring constantly, fry until light nutty flavor (small pan 4 minutes, large pan 3 minutes). Stir especially often at the end of frying, as Hercules can burn. Oatmeal prepared in this way will give less stickiness to the dough and give the waffles a special taste.
Step 4
Let the oatmeal cool for 5 minutes and add to the chopper. Grind to the state of whole wheat flour interspersed. I usually keep the rolled oats in the shredder for 2.5 minutes.
Step 5
Combine flour, chopped oatmeal, sugar, baking powder, baking soda, and salt in a small bowl. Stir with a hand whisk (45 sec).
Step 6
Whisk the egg and butter in a separate kneading bowl (30 sec).
Step 7
Add cold kefir to the egg and butter mixture. A couple of nuances. This recipe requires low-fat kefir, with a certain fluidity, but not water. The standard 3.5% is also not suitable, too thick. The desired properties are possessed by 1.5-2% kefir.
Step 8
Add dry ingredients to liquid ingredients at one time, stir (20 sec). Leave the dough to "walk" for 5 minutes.
Step 9
Turn on the waffle iron and let it warm up properly, 5 minutes will be enough.
Step 10
When the dough is "ripe", open the lid of the waffle iron and sprinkle with oil spray (or brush with a thin layer of vegetable oil with a brush) the top and bottom "waffle" surfaces.
Step 11
Spoon the dough into the sections of the waffle iron, according to the instructions of your machine. Do not lay out a lot, otherwise it will not bake or will "float" strongly (excess dough will climb out of the waffle iron on the table).
Step 12
Pay attention to par. At the beginning of baking, the steam will tumble down in a column, but by the end of 2 minutes it will noticeably decrease. How much to fry depends on your machine. I usually keep it for 2 min 30 sec if I bake all four waffles or 1 min 30 sec if I bake two.
Step 13
Remove the waffles whole layer, then divide into portions. Cut off excess. Do not cover. Continue baking, sprinkling vegetable oil on the surface of the waffle iron each time. I do not recommend storing the dough until the next morning, the waffles will turn out raw inside.
