Reburners
Perepechi is one of the most famous dishes of Udmurt cuisine, a kind of open cheesecake. The name of the oven comes from the expression "in front of the stove," that is, before a strong fire. Traditionally, this ancient dish is prepared from rye flour with meat or vegetable filling, which is poured over with an omelet.
Ingredients
- fresh cabbage - 200 g
- onions - 100 g
- egg - 2 pieces
- milk - 150 ml
- salt, black pepper - to taste
- chopped greens - to taste
- egg - 1 piece
- milk - 50 ml
- water - 50 ml
- vegetable oil - 30 ml
- rye flour - 100 g
- wheat flour - 200 g plus for working with dough
- salt - a pinch
STEP-BY-STEP COOKING RECIPE
Step 1
After kneading, leave the dough to "rest" for 15-20 minutes, wrapping it in cling film.
Step 2
Then we roll out a tourniquet from the dough, 4 cm thick and cut it into small lumps (weighing about 25-30 g each). Sprinkle each lump with flour and roll out the cakes with a diameter of 8-10 cm.Flip the edges of the cakes, forming a side 0.5 cm high.
Step 3
Cooking the filling. Cut fresh cabbage into small pieces, remove the stump, and chop finely in a trough with a chop (you can grate it on a coarse grater or use a food processor). Add onions to the trough and chop together with cabbage.
Step 4
Mix chopped cabbage and onion with egg and milk. Add salt, pepper and chopped herbs to taste.
Step 5
Pour the filling into dough baskets and bake in a wood-burning oven until tender. Or we use the oven and bake at 200 ⁰C, 10 minutes. / Serve warm.
