Salmon in shortcrust pastry with aromatic oil
Juicy fish sandwiched with aromatic butter with a hint of mustard and lemon, covered with a layer of brittle shortcrust pastry ... Guests will be delighted!
Ingredients
- salmon 800 g
- chopped dill 3 tbsp
- butter soft 60 g
- fresh chopped basil 1 tbsp
- lemon cedar 1/4 tbsp.
- grain mustard 1 tbsp
- for the test:
- salt 1 tsp
- ice water 5 tbsp.
- flour 225 g
- cold butter 140 g
- egg for lubrication 1 pc.
STEP-BY-STEP COOKING RECIPE
Step 1
Put green butter on one fillet, and grease the other with mustard (on the side where the bones were)
Step 2
Transfer to the rolled dough. Grease the free edges with an egg.
Step 3
Put in an oven preheated to 200 degrees for 25 minutes. Remove when the crust of the dough is well browned.
Step 4
Cut when standing for about half an hour. The dough is very fragile. Cut with a sharp knife, easily, without pressing down.
