Scramble in Swiss
With just 4 main ingredients - eggs, cheese, butter and wine - the result is a delicious dish that looks a bit like cheese fondue. Unfortunately, the main taste here depends on the Swiss Gruyere cheese; it is highly undesirable to replace it with another.
Ingredients
- 6 eggs
- 250 g gruyere cheese
- 60 g butter + some for toast
- 130 ml dry white wine
- 5 sprigs of parsley
- 3 feathers of green onions
- a pinch of grated nutmeg
- salt, freshly ground black pepper
- 4 slices of toast bread
STEP-BY-STEP COOKING RECIPE
Step 1
1. Cut the crusts off the bread and cut each piece into 3 pieces. Melt the butter in a skillet and brown the breadsticks until golden on both sides.

2. Divide the eggs into whites and yolks. Whisk the whites until stiff peaks.

3. Grate the cheese on a fine grater. Chop parsley leaves and green onions.

4. Place cheese, butter, wine and herbs in a saucepan. Put on low heat and cook, stirring constantly, until the cheese is completely melted.

5. When the curd is smooth and smooth, season with nutmeg and black pepper, then add the yolks and whites. Continue cooking over low heat, stirring the mixture with a whisk until it thickens.

6. Transfer the scramble to plates and serve with toasted toast.
