Strawberry custard tart

You can make so many incredibly delicious desserts with ordinary strawberries! For example, strawberry custard tart. The tart itself cooks quickly, but it will take extra time for general preparation and a little patience. But the result is worth it.

Strawberry custard tart
Ingredients
  • 500 g large strawberries
  • 250 ml whole milk
  • 200 ml of cream with a fat content of 33%
  • 4 eggs
  • 20 g flour
  • 20 g cornstarch
  • 70 g of sugar
  • 6 tablespoons strawberry jam
  • 2-3 tbsp. l. strawberry juice
  • zest of half a lemon
  • half a pod of vanilla
  • small basil leaves for decoration
  • 200 g flour + a little more for rolling
  • zest of 1 small lemon
  • salt
  • 125 g chilled butter + more for lubrication
  • 1 yolk
  • 60 g of sugar

STEP-BY-STEP COOKING RECIPE

Step 1
For the dough, combine flour, zest, salt, and diced cold butter in a bowl of a food processor. Grind into crumbs. Separately grind the yolk and sugar until white. Add flour crumbs, quickly knead to a homogeneous dough, adding a little ice water if necessary. Form a ball, wrap in plastic and refrigerate for 1 hour.
Step 2
Roll out the dough on a flour-dusted table into a rectangular layer 4–5 mm thick. Transfer to a greased baking dish about 12x35 cm. Shape the sides and refrigerate for 30 minutes.
Step 3
Use a fork to prick the dough, cover with baking paper. Sprinkle with cooking beans or dry beans. Bake in oven at 180 ° C for 20 minutes, remove beans and paper, bake for another 7-10 minutes. The dough should turn golden. Cool the base.
Step 4
For the cream, cut the vanilla pod in half and scrape out the seeds with the blunt side of a knife. Add the seeds and the vanilla pod to the saucepan with milk and sugar. Bring to a boil, remove from heat, let it brew for 15 minutes.
Step 5
Beat eggs with flour and starch until smooth. Pour in the milk mixture in a thin stream (remove the pod), without stopping whipping. Put on fire and cook, stirring all the time with a spatula, until thickened. Cool slightly and rub through a sieve. Cool completely.
Step 6
Whisk in very cold cream until firm. Gently mix cream and cream in 3 steps, stirring with a spatula from bottom to top. Spread the cream over the cooled dough base.
Step 7
Cut the strawberries into neat slices. Spread it over the cream.
Step 8
Mix jam with strawberry juice. Melt the mixture in a saucepan over low heat without simmering. Rub through a sieve. Using a silicone brush, brush the berries with the resulting glaze. Place the tart in the refrigerator for 30 minutes. Garnish with basil.
