Strudel with cottage cheese and cherries

The main rule when preparing strudel is to wrap it well so that all the most valuable remains inside. But also follow the thickness of the dough - remember - where it is thin, there it breaks.

Strudel with cottage cheese and cherries
Ingredients
  • 200 g cherries
  • 100 g icing sugar
  • 400 g fat cottage cheese
  • 80 g cream, 30% fat
  • 1 large egg + 1 yolk
  • 500 g puff pastry
  • 3 tbsp. l. sweet crackers
  • ice cream for serving

STEP-BY-STEP COOKING RECIPE

Step 1
Remove the seeds from the cherries, sprinkle with half the icing sugar and stir.
Step 2
Mix cottage cheese with cream, egg and remaining powdered sugar, beat with an immersion blender until smooth.
Step 3
Roll out the dough into a rectangle 45x35 cm. Sprinkle one third (along the long edge) with breadcrumbs. Place the curd filling on the crackers. Sprinkle with cherries (keep the juice before serving).
Step 4
Gently roll the whole structure into a roll, place on a baking sheet covered with parchment with the seam down. Allow to distance 15–20 minutes, brush the dough with yolk.
Step 5
Preheat oven to 200 ° C. Place a baking sheet in the bottom third of the oven and bake until golden brown, about 35 minutes.
Step 6
Let the strudel cool slightly before serving, 15–20 minutes. Serve warm with ice cream and cherry juice.
