Toast with pickled radish, avocado and bagged eggs
Ingredients
  • 100 g of radishes
  • 2 eggs
  • 4 slices of toast bread
  • 1 large avocado
  • juice of half a lime
  • 1 tbsp. l. white wine vinegar
  • extra virgin olive oil
  • sugar
  • a pinch of ground chili
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Boil the eggs in a bag, 5 minutes. Cut the radish into 6-8 pieces, depending on the size. Mix with vinegar, sugar and salt.
Step 2
Cut the avocado in half. Remove the bone. Spoon out the pulp and mash it with a fork. Drizzle with lime juice and stir in chili.
Step 3
Fry the bread in a dry frying pan, 1 min. from each side. Drizzle with olive oil. Salt. Spread over mashed avocado. Place half an egg and a pickled radish on top. Season with pepper and serve.
