Truffle Caramelized chocolate with salt

Ingredients
- 400 g white chocolate
- 60 g cream
- 25 g glucose
- 10 g medium sea salt

Step 1
Preheat oven to 180 ° C. Put the chocolate on a baking sheet with a silicone mat and heat it for 4 minutes, smearing it on the clean surface of the silicone mat each time between “runs” with a silicone spatula so that the chocolate remains liquid. When the chocolate is caramelized (about 16 minutes), remove the baking sheet and transfer the chocolate to a bowl.
Step 2
Mix the cream with glucose and bring to a boil. Pour cream into melted chocolate. Punch with a hand blender. Add salt, stir. Leave to crystallize for 12 hours.
Step 3
Form into 10g round truffles.
Step 4
Temper the chocolate to cover. Put the prepared candy on a fork and glaze the candy. Leave until the chocolate hardens completely.
