Apple muffins with hazelnut streusel

The great is made up of little things. So in these seemingly very simple apple muffins, it is the little things that play first fiddle. The first little thing - nutty streusel with brown sugar and cinnamon - adds an interesting texture and delicious aromas to the muffin. The second trifle is caramel glaze, it not only decorates the product, its taste complicates the perception of the dish, making it perfect.

Ingredients
  • 50 g of brown sugar
  • 2 tbsp. l. butter
  • 2 st. l. milk
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 2.5 cups flour
  • 1/4 tsp salt
  • 2.5 tsp baking powder
  • 1/2 tsp soda
  • 200 g of brown sugar
  • 250 ml of kefir
  • 1/2 cup vegetable oil
  • 1 egg
  • 2 tsp vanilla extract
  • 2 medium apples
  • 15 g cold butter
  • 70 g of brown sugar
  • 1/2 tsp ground cinnamon
  • 2/3 cup walnuts

STEP-BY-STEP COOKING RECIPE

Step 1
1. For a streusel, finely chop the nuts. Combine all the ingredients in a bowl and rub with your fingers until you have a coarse crumb. Set aside.

2. Peel the apples and cut into medium cubes.

3. Preheat the oven to 200 ° C. Prepare a mold for 16 small or 12 medium muffins.

4. Sift all dry ingredients into a bowl: flour, salt, baking powder and baking soda.

5. In another bowl, combine brown sugar and egg, add vegetable oil. At the end, pour in the vanilla extract and kefir, stir well.

6. Pour wet mixture into dry mixture and stir quickly. Add apples.

7. Divide the dough into tins, no more than 2/3 full. Distribute the streusel. Reduce oven temperature to 175 ° C and bake muffins for 20-25 minutes. Check readiness with a wooden stick. Cool the muffins in the pan, 10 minutes, then gently transfer to the wire rack and leave for another 15–20 minutes.

8. For the icing, combine brown sugar, butter and milk in a saucepan and heat to dissolve the sugar. Add vanilla extract, stir and add powdered sugar, stir. You should have a frosting that is similar in consistency to liquid honey. Add some milk or powdered sugar if needed.
