Boiled beef with vegetables
Ingredients
- 1 kg beef pulp in one piece
- 1 medium onion
- 1-2 medium carrots
- 1 celery stalk
- 2-3 sprigs of different greens (dill, parsley, cilantro, tarragon, basil)
- 1 bay leaf
- 3-4 peas of black and allspice
- salt
- 2 medium carrots
- 300 g each broccoli and cauliflower
- 100 g of green pea pods
- 1 small bunch of dill
- butter
- 3 large potatoes
- salt
STEP-BY-STEP COOKING RECIPE
Step 1
Tie the meat with cooking twine and place in a saucepan. Pour in so much water that it is 2 cm higher than the meat.Put on medium heat and bring to a boil. Remove the foam with a slotted spoon.
Step 2
Peel the onions and carrots. Put vegetables and herbs in a saucepan, add bay leaves and peppercorns. Salt a little and simmer under a light boil for 1.5-2 hours until tender.
Step 3
Peel vegetables for garnish. Slice the carrots diagonally. Disassemble the broccoli and cauliflower into small florets. Cut the potatoes into wedges.
Step 4
Boil water in a wide saucepan and season with salt. Add potatoes and carrots and cook for 10-12 minutes. Then add broccoli and cauliflower and cook for another 5 minutes. Place the pea pods last and cook for another 5 minutes.
Step 5
Discard vegetables in a colander, then transfer to a platter. Season with butter and finely chopped dill.
Step 6
Thinly chop the boiled meat and serve with a vegetable garnish.
