Bulgur with fried vegetables and shiitake
This bulgur is prepared according to the simplified technology of Chinese fried rice: all vegetables and mushrooms, cut very finely, are quickly fried and mixed with ready-made cereals. Great dinner!
Ingredients
- 20 g dry shiitake or 100 g oyster mushrooms
- 1 small zucchini
- 2 multi-colored sweet peppers
- 1 large onion
- 1 large carrot
- 3 cups pre-cooked bulgur (can be couscous)
- 100 g thawed green peas
- olive oil
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Soak the mushrooms in warm water for 30 minutes, put them in a colander, remove the hard legs, cut the rest into thick slices. if using fresh oyster mushrooms, pick them into thin strips.
Step 2
Cut the zucchini and peeled peppers into small cubes. Peel the onions and carrots and cut into strips.
Step 3
Heat oil in a frying pan, fry vegetables and mushrooms over high heat, stirring occasionally, until golden brown, 5 minutes.
Step 4
Add bulgur, salt and pepper, mix thoroughly, add peas, heat for 1-2 minutes. Serve immediately.
