Chicken broth with homemade noodles
- chicken 1 kg
- water 5 l
- onion 20 g
- carrots 25 g
- flour 200 g
- chicken egg 2 pcs.
- olive oil 40 ml
- quail egg 4 pcs.
STEP-BY-STEP COOKING RECIPE
We wash the chicken. Pour cold water into a saucepan in a ratio of 5 liters of water per 1 kg of chicken, bring to a boil. Remove the foam and leave the chicken to simmer over low heat.
In a dry frying pan, bake the onions and carrots, add them to the broth and simmer for 1 hour. Then we filter and separate the meat from bones and skin. Divide the meat into fibers.
Cooking noodles. Knead flour, chicken egg and olive oil until smooth. Wrap in plastic and put in the refrigerator for 20-30 minutes. Next, roll out the dough with a rolling pin to a thickness of 2-3 mm and cut it with a knife into thin noodles.
Throw noodles and chicken into the boiling broth. Cook for 3 minutes, add parsley, salt and pepper. Boil quail eggs, cool and cut in half.
Pour soup into a plate and lay out the quail eggs.
