Chicken stuffed with couscous and dried fruits
  • chicken 1 pc.
  • couscous 150 g
  • zest of 1 orange
  • juice of 1 orange
  • lemon 1 pc.
  • prunes 8 pcs.
  • dried cherries 50 g
  • raisins 50 g
  • sea salt to taste
  • mixture of peppers to taste
  • dried mint 1 pinch (s)
  • fresh parsley 1/3 bunch (s)
  • olive oil
  • large potatoes 3 pcs.
  • 1/2 tsp cinnamon
  • cumin, seed 1/2 tsp
  • coriander, seeds 1/2 tsp.
  • black peppercorns 1/2 tsp


Step 1
Place couscous in a bowl, add dried fruits (if dried fruits are large, pre-cut). Add dried fruits, nuts, lemon and orange juice, citrus zest, a couple of tablespoons of olive oil to the couscous. Pour 1 glass of boiling water, close the lid and leave for 5-7 minutes. Then loosen the couscous with a fork.
Step 2
Add chopped parsley, a pinch of mint to the couscous, mix. The filling for stuffing chicken is ready.
Step 3
Crush all the spices, add salt to them and grate the chicken from the inside with the resulting mixture. Stuff the chicken with couscous with dried fruits, tie the chicken legs, block the stuffed chicken with half a lemon. Rub the outside of the chicken with spices and salt.
