Chocolate mousse at aquafaba

Why didn't we know before that chocolate mousse can be made in aquafaba? This is so wonderful! No eggs! The dessert is indistinguishable from the traditional one in taste, the main thing is not to skimp on high-quality chocolate. Only it cannot be stored, although who will keep such a delicious dish.

Chocolate mousse at aquafaba
  • 200 g dark chocolate
  • seeds 1/3 vanilla pod
  • 150 ml of aquafab
  • 1 tbsp. l. lemon juice
  • 100 g icing sugar
  • salt to taste
  • berries or mint for decoration


Step 1
Break the chocolate into equal pieces. Melt the chocolate in the microwave or water bath. Add vanilla seeds and refrigerate slightly, stirring occasionally.
Step 2
Using a mixer on medium speed, beat the aquafaba with lemon juice and a small pinch of salt until soft peaks.
Step 3
Gradually (in portions), without stopping whipping, add the powdered sugar. Whisk until crisp.
Step 4
Pour in the melted slightly cooled chocolate and gently stir the mixture from top to bottom until smooth. Only to homogeneity, you should not abuse mixing here! Divide the chocolate mousse into glasses or bowls. Garnish with berries or mint and serve immediately.
