Ingredients
  • 200 g wheat flour
  • 130 g rye flour
  • 225 ml water
  • 2-3 g fresh yeast
  • 7 g of salt
  • 40 g rye sourdough
  • 110 ml water
  • 160 g peeled rye flour

STEP-BY-STEP COOKING RECIPE

Step 1
For starter, mix all the ingredients, leave to ferment at 30 ° C for 6 hours.
Step 2
Measure 280 g from the resulting starter and knead the dough along with all the other ingredients. Leave to ferment at 30 ° C for 1 hour.
Step 3
Shape the bread and let it stand at 30 ° C for 1 hour. Bake at 220 ° C for 45–50 minutes, with steam (place a container of water on the bottom of the oven). Sprinkle the bread with water before removing it.
