If you want to discover a familiar dish from an unexpected side, prepare tender cottage cheese pancakes with raisins according to our recipe. Their beauty lies in the fact that they partly resemble thick pancakes or pancakes. But not syrniki in the usual sense of the word! The secret is simple: we do not add flour to their dough, but use it only as a breading. At the same time, tender cheese cakes with raisins inside are not at all liquid, since the eggs regularly perform their binding function. The result is an absolutely incomparable dish that disappears from the table in a matter of minutes.

Ingredients
  • raisins - 50 g
  • very dry cottage cheese with 5-9% fat content - 450 g
  • eggs of category C2 - 2 pcs.
  • sugar - 1 tbsp. l.
  • sugar - 1 tbsp. l. salt - on the tip of a knife
  • flour - 120-140 g
  • vegetable or ghee for frying

STEP-BY-STEP COOKING RECIPE

Step 1
Prepare a dough for tender cheesecakes. To do this, wash the raisins thoroughly, then put them in a small bowl. Cover with boiling water and let sit for 10 minutes.
Step 2
Rub the cottage cheese for tender curd cakes through a fine sieve into a large bowl. Add eggs, sugar and salt. Mix thoroughly with a large whisk or hand blender.
Step 3
Add raisins to the curd dough and stir again. Tighten the top of the bowl with cling film and refrigerate for 1 hour. This will make it easier to work with the cheese pan dough.
Step 4
Place the flour in a heap on a board or in a deep bowl. Place a heavy-bottomed frying pan on a small fire and heat the vegetable oil or ghee well in it.
Step 5
With a tablespoon, very carefully place a little curd dough into the flour, then immediately remove and shape the cheesecake in your hand. Your task is not to pour flour inside!
Step 6
Put the syrniki prepared in this way in hot oil. Fry on one side until golden brown, then turn over with a narrow spatula and brown on the other. Serve immediately.
