Fried potatoes with chanterelles and poached egg

Everyone's favorite fried potatoes with mushrooms appears in this recipe in a new version. A poached egg in it is not only for effective serving. The flowing hot yolk envelops the potato slices, and the chanterelles in this design seem even more tender.

Fried potatoes with chanterelles and poached egg
  • 1kg small young potatoes
  • 400 g chicken liver
  • 150 g of chanterelles
  • 1 onion
  • 2 tbsp flour
  • 2-3 sprigs of cilantro
  • 4 eggs
  • vegetable oil for frying
  • salt pepper


Step 1
Peel potatoes, cut into thin slices. Heat vegetable oil in a skillet and fry potatoes in it until tender.
Step 2
In a frying pan, mix the potatoes, liver and mushrooms. Season with salt and pepper, add chopped cilantro.
Step 3
For a poached egg, grease a plastic bag from the inside with oil and gently break the egg into it so that the yolk remains intact. Tie the bag tightly as close to the egg as possible and put it in a saucepan for 3-4 minutes.
Step 4
Serve the potatoes with mushrooms, placing the poached egg on top of the plate.
