Grilled vegetables in tomato marinade
In summer, bright, fragrant, tasty, healthy grilled vegetables will be an excellent side dish for barbecue. Marinade with aromatic spices, herbs, ketchup "TM Maheev" gives vegetables an extraordinary spicy taste and crispy brown crust !!! There will be no indifferent, everyone will ask for more.
Ingredients
- zucchini 2 pcs.
- eggplant 2 pcs.
- bulgarian pepper 2 pcs.
- red onion (Crimean) 2 pcs.
- tomatoes 2 pcs.
- fresh basil 1 bunch
- dill, parsley, cilantro 1 bunch
- garlic 1 pc.
- lemon 1 pc.
- ketchup 4 tbsp
- chili pepper 1 pc.
- freshly ground pepper mixture 1 dl
- olive oil 4 tablespoons
- balsamic vinegar 1 tbsp
- salt 1 dl
- mustard seeds 1 tsp
- marjoram 1 tbsp.
STEP-BY-STEP COOKING RECIPE
Step 1
Let's prepare the necessary ingredients. We wash and dry vegetables and greens, cut off the tails. Peel the onion and garlic.
Step 2
Cut the eggplants and zucchini into rings about 1 cm thick. Peel the pepper, cut it into four parts and remove the seeds. I cut the onions lengthwise into three large pieces. Finely chop the greens. Cut the tomatoes into three or four parts before frying so that they do not lose juice. Do not pickle tomatoes.
Step 3
For the tomato marinade, rub the lemon zest into a deep cup, squeeze the lemon juice, peel the lemon pulp and chop it finely. Add olive oil, ketchup and a tablespoon of balsamic vinegar.

Mix everything well.

We put vegetables in the marinade, add finely chopped herbs, basil, spices, salt and pepper to taste. Cover with cling film and leave to marinate for 40-60 minutes.

Of course, no grill pan can replace a real picnic in the open air, the fire gives the dishes an extraordinary aroma and taste ... but the rainy season has begun ...

We heat the grill well, lay out the vegetables and fry on both sides for 8-10 minutes. First, I fried eggplant and zucchini.

Then peppers, onions, tomatoes, chili and garlic.
