Homemade lemon and orange slices

Homemade lemon and orange slices
  • 4 medium oranges
  • 4 medium lemons
  • 300 g of sugar
  • 800 ml water
  • 100 g chocolate (from 50% cocoa)

Step 1
Wash oranges and lemons well with a brush, dry and cut into thin slices with the peel (it is convenient to use a kitchen machine with a slicer).
Step 2
Boil the kettle. Place a large, wide bowl on the stove (as for making jam), pour water into it, turn on the burner to maximum heat and let the water boil again. Put lemon and orange slices in boiling water, leave for 1 minute, then catch with a slotted spoon and transfer to a bowl of ice water.
Step 3
Meanwhile, combine sugar and water in a large deep saucepan, put on medium heat and simmer until syrup, 10 minutes. Once the syrup thickens, reduce the heat to low, place the lemons and oranges in the syrup and cook for 10 minutes. Then transfer the lemons to a wire rack (you will need 2 wire racks to arrange the wedges in one layer), place the tray underneath and let the excess syrup drain.
Step 4
Preheat oven to 70 ° C. Place baking trays with lemon and orange slices on the middle and upper rack of the oven, put the tray down so that excess syrup drips into it. Turn on the convection mode and dry the wedges for about an hour and a half, then turn over and dry for another half hour.
Step 5
Break the chocolate into pieces, place in an ovenproof bowl, cover with foil. Remove the grates with citrus slices from the oven, turn off the convection mode. Put the chocolate in the oven for 15 minutes, do not change the heat. At this time, stir the chocolate a couple of times with a wooden spoon so that it melts evenly.
Step 6
Dip the halves of the wedges to half in the melted chocolate and let cool on the wire rack.
Step 7
Place the cooled wedges in food containers or glass cookie jars. Store no more than 3 weeks.
