Honey cake Fluffy
  • dough: honey 420 g
  • sugar 80 g
  • butter 100 g
  • sour cream 150 g
  • soda 1 tsp
  • eggs 4 pcs.
  • flour 400 g
  • cream: cream 25-35% 800 g
  • sugar 250 g
  • cream 33-35% 480 ml


Step 1
Add sour cream and baking soda. Cook, stirring occasionally, until the mixture is almost non-foaming.
Step 2
Remove from the bath, add eggs and flour and knead the dough. The dough turns out to be quite liquid
Step 3
Bake the cakes for 10-12 minutes until golden brown. They may bubble in the oven - this is normal.
Step 4
Prepare the cream. To do this, combine all the components of the cream in a mixer bowl (cream and sour cream should be very cold) and beat at maximum speed until the cream becomes snow-white and airy
Step 5
Collect the cake, smearing the cakes with cream, folding from a pile. I collected the cake in a split ring.
Step 6
Sprinkle the finished cake with crumbs from the cakes, decorate as desired. I sprinkled the top of the cake with crispy waffle crumbs, garnished with salted caramel, pieces of honey in a comb and rosemary leaves
