Lobio with fried onions
- 3 cups red beans
- 4 onions
- 6-7 pinches of ground coriander
- 3 pinches of ground red pepper (to taste)
- 1-2 bunches fresh cilantro
- 70 g walnuts
- vegetable oil for frying
STEP-BY-STEP COOKING RECIPE
Rinse the beans, cover with water and soak overnight. Then drain the water, pour 8-9 cups of fresh water over the beans and cook without salt until cooked for about 1.5 hours.
While the beans are boiling, peel the onions, cut into half rings and lightly fry in vegetable oil.
Divide the finished beans in half, chop half in a blender. Then add all the beans to the onion pan. Fry everything together, stirring occasionally, for about 15 minutes. Season with finely chopped garlic, ground coriander, finely chopped herbs, and red pepper. Salt. Stir in chopped walnuts. Serve the lobio hot or cold.
