Lush pancakes on kefir with condensed milk ... Agree, just the name of the dish wakes up an indomitable appetite! By the way, pancakes were considered a more "respected" dish than pancakes. Perhaps that is why (and not because of a successful rhyme) in our folklore there are many riddles, songs and sayings dedicated to pancakes prepared by grandmothers. No wonder: for the sake of their beloved grandchildren, they are always ready to do their best! To this day, grandmothers bake delicious lush pancakes on kefir and serve with the most delicious "additives": jam, thick sour cream or condensed milk.
Ingredients
- eggs - 2 pcs.
- sugar - 70 g
- kefir - 400 ml
- baking powder 1 tsp.
- salt - on the tip of a knife
- soda - 1/2 tsp.
- flour - 270 g
- vegetable oil for frying
- condensed milk for serving - 100 g
STEP-BY-STEP COOKING RECIPE
Step 1
Make a dough for fluffy kefir pancakes. Combine eggs, sugar and kefir in a deep bowl. You can also add some vanilla sugar or grated lemon zest.
Step 2
Beat the egg-kefir mass with a whisk or fork. Add baking powder, salt and baking soda at the same time. Stir with a whisk or fork. The mass should actively foam.
Step 3
Sift flour in portions into a mass for fluffy kefir pancakes. First - 4 tbsp. l. with a slide. Stir with a whisk so that there are no lumps. Then gradually add the remaining flour.
Step 4
Knead the dough for fluffy kefir pancakes with a whisk until a thick, homogeneous consistency is obtained. If it is too dense, pour in a little kefir. If too thin, stir in more flour.
Step 5
Lubricate a non-stick pan with vegetable oil. Spoon the dough out with a tablespoon and cook over medium heat until bubbles begin to burst on the surface.
Step 6
Use a spatula to turn the fluffy kefir pancakes over and fry on the other side until browned. Place on a plate and serve immediately with condensed milk.
