Pancakes with black currant
Ingredients
- 300 g flour
- 1 tsp sugar
- 2 eggs
- 500 ml low-fat cream
- 30 g butter
- vegetable or ghee for frying
- salt
- 400 g black currant
- 70 g of brown sugar
- 2 tbsp. l. butter
- 300 ml cream, 33% fat
- 20 g vanilla sugar
STEP-BY-STEP COOKING RECIPE
Step 1
Sift flour into a large bowl, add sugar and a pinch of salt, make a small indentation in the center.
Step 2
Whisk eggs, cream and 100 ml water separately. Pour this mixture gently into a bowl of flour. Knead to a homogeneous dough. Add melted butter and knead thoroughly. Cover and let stand for 30 minutes.
Step 3
Grease a skillet with oil and place over medium heat. Pour the dough in a thin, even layer. Fry for 1 minute. from each side. Place ready-made pancakes in a stack in a saucepan, closing the lid each time.
Step 4
For the sauce, defrost the black currants beforehand. Melt sugar and butter, cook until golden brown.
Step 5
Pour in the cream (careful, it splashes!) And add the vanilla sugar. Mix thoroughly, cool slightly. Add currants. Pour the sauce over the pancakes and serve.
