Pancakes with poached egg, asparagus and morels
Intricate accompaniment, beautiful presentation - and now simple pancakes are turning into an exquisite haute couture dish. A recipe from a French chef, by the way.
Ingredients
- egg - 4 pieces
- morels or milk mushrooms (pickled) - 60 g
- asparagus - 200 g
- shallots - 32 g
- berry blanc sauce - 80 g
- milk - 1 liter
- eggs - 4 pcs
- soda - 2 g
- olive oil - 40 g
- flour - 400 g
- salt - 4 g
- lemon juice - 25 g
STEP-BY-STEP COOKING RECIPE
Step 1
For the dough, beat eggs with salt, gradually add flour. Pour in milk and stir gently until smooth. Let it brew for 20 minutes. Add soda and lemon juice. Add olive oil before baking.
Step 2
Prepare poached eggs: add a spoonful of vinegar to boiling salted water, spin the funnel with a whisk, gently break an egg into the water and cook for 1 minute.
Step 3
Simultaneously fry the asparagus, shallots, morels (milk mushrooms) in a pan for 3-5 minutes, add the berry blanc sauce and let stand for a couple of minutes.
Step 4
Place the pancake nicely in the form of a ring, put the prepared filling in the center, place the finished poached egg on top.
