Parrot fish in Mauritian
Ingredients
  • 1 parrot fish (about 1 kg)
  • 1 large onion
  • 2 leeks, white part only
  • 2 cloves of garlic
  • 1 chili pepper
  • 2 tbsp. l. olive oil
  • 230 ml dry white wine
  • 3 bay leaves
  • 3 sprigs of thyme
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Finely chop the whole onion, garlic and chili (with or without seeds). Fry in olive oil, 2-3 minutes. Season with salt and pepper.
Step 2
Add 2 bay leaves, 2 sprigs of thyme, pour in white wine. Simmer over low heat, 5 minutes.
Step 3
Place the remaining bay leaf and thyme sprig into the fish belly. Place vegetables in an ovenproof dish, fish on them. Cover with foil and bake in oven at 180 ° C, 20 minutes. Serve immediately with the vegetables.
