Plum tart-tatten

The classic tart-taten is prepared with apples. But this open pie is so popular that many varieties of tart-taten with other fruits and berries have emerged. Jamie makes it with plums and maple syrup and serves it with a scoop of ice cream like strudel.

Plum tart-tatten
  • 600 g ripe plums of different colors
  • 1 tsp ground cinnamon
  • 120 ml of maple syrup
  • 320 g quality puff pastry
  • 6 scoops of vanilla ice cream


Step 1
Preheat oven to 220 ° C. Place a 26 cm non-stick ovenproof pan over medium heat.
Step 2
Cut the plums in half, remove the seeds and place in the skillet. Pour in 30 ml water and cook for 1 minute. Sprinkle with half the cinnamon and top with maple syrup. Cover with a layer of dough, tuck in around the edges with a wooden spatula, trim off the excess and, if necessary, close the holes.
Step 3
Bake on the lower shelf of the oven for 16 minutes, until the dough rises and browns. Put on oven mitts and gently flip the cake onto a larger plate. Serve with a scoop of vanilla ice cream, sprinkled with leftover cinnamon and a drizzle of extra virgin olive oil.
