Pork ribs in vanilla marinade

It would seem, where is pork, and where is vanilla? Nevertheless, in this dish, they are closer than ever. The sweetish scent of vanilla adds extra charm to the sprinkling juices. They are even better with a baked fruit garnish.

Ingredients
  • 50 g brown sugar and coarse sea salt
  • 2 vanilla pods
  • 1 pod of hot red chili
  • 36 g black peppercorns
  • 2 kg pork ribs

STEP-BY-STEP COOKING RECIPE

Step 1
Boil 2 L of water in a large saucepan. Add salt and sugar. Cut the vanilla pods in half lengthwise and use the end of a sharp knife to scrape the seeds into a saucepan. Put the pods themselves there. Bring to a boil, cook until salt and sugar are completely dissolved, 5-7 minutes.
Step 2
Remove the stalk and seeds from the chili, cut the pod into rings. Remove the saucepan from the heat, add the chili rings and the peppercorns crushed by a knife blade. Cool completely, about 2 hours.
Step 3
Cut the ribs into sections of 2-3 ribs, place in a wide bowl with high edges and cover with marinade. Cover and refrigerate for 4-6 hours.
Step 4
Grill the marinated ribs on hot coals or on the hottest grill in the oven. In the first case it will take 10-15 minutes, in the second - about 20 minutes. Remember to turn the ribs while baking.
