Portion omelets with salsa

These mini omelets are very convenient to serve as a snack when you have a lot of guests. They look very presentable, and very little time is needed to prepare them.

Portion omelets with salsa
Ingredients
  • 12 eggs
  • 1/4 cup milk
  • 50 g spinach
  • 100 g cherry tomatoes
  • 1 medium onion
  • 50 g feta
  • 1 avocado
  • 2 medium tomatoes
  • half a sweet green pepper
  • 1 small red onion
  • 1/4 hot chili
  • 1 clove of garlic
  • 5 sprigs of cilantro
  • 1 tbsp. l. lime juice
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
1. Make salsa. Peel avocado and onion, remove seeds from pepper. Chop avocado, onion, peppers and tomatoes into small cubes. Chop the cilantro leaves, chop the garlic. Remove the seeds from the chili pepper, finely chop the pepper. Mix all the salsa ingredients, salt and pepper, refrigerate for 30 minutes.

2. Preheat oven to 175 ° C. Oil a 12 muffin pan or small ceramic tins.

3. Finely chop the spinach, cut the onion into small cubes, cut the cherry tomatoes into 4 pieces.

4. Whisk eggs and milk in a large bowl and season with salt and pepper. Add spinach, cherry tomatoes and onions. Divide the mixture into the molds. Bake in the oven for 20-25 minutes, until tender.
Step 5
5. Remove the finished omelets from the oven and leave for 5 minutes, then gently run a knife along the sides of the molds and transfer to a dish.
Step 6
6. Place salsa on top of omelets and sprinkle with crumbled feta. Serve hot.
