Rabbit in white wine with olives and capers

An ideal side dish for such a rabbit is creamy mashed potatoes (do not spare butter and cream on it!). American pale ale is a good drink.

Ingredients
  • 1 rabbit 2.5 kg
  • 1 bottle (750 ml) dry white wine
  • 4 medium onions
  • 1 head of garlic
  • 1 bouquet garni (thyme, parsley, bay leaf)
  • 1 can (400 g) olives
  • 2-3 tbsp. l. capers
  • 3 tbsp. l. flour
  • melted butter
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Cut the rabbit into portions. Season with salt and pepper on all sides.
Step 2
Peel the onion and garlic, chop the onion into small pieces, finely chop the garlic. Heat oil in a heavy-bottomed saucepan. Fry the rabbit pieces in batches until golden brown and place on a plate.
Step 3
Add oil to the same saucepan and fry the onion, 5-7 minutes. Add flour and stir well. Return the rabbit to the pan, pour in the wine, add a bouquet of garni and garlic.
Step 4
Cover with cold water so that the meat is completely covered. Simmer over low heat for 1.5 hours. For 5 minutes. add olives and capers until tender.
