Salad with chanterelles and pastrami

Salad with chanterelles and dried beef pastrami is a wonderful addition to the tender tuna mousse. Of course, such a salad is not for every day, but it must be prepared - at least once - during chanterelle season.

Salad with chanterelles and pastrami
Ingredients
  • chanterelles - 600 g
  • spring roll dough - 60 g
  • vegetable oil for frying
  • pastrami - 200 g
  • radishes - 20 g
  • soy sauce - 12 g
  • olive oil - 40 g
  • grape seed oil - 12 g
  • arugula - 40 g
  • corn - 40 g
  • radicchio - 20 g
  • frieze - 20 g
  • lettuce leaves - a handful
  • mayonnaise - 350 g
  • anchovies - 25 g
  • canned tuna - 550 g
  • olive oil - 50 g
  • cream with a fat content of 33% - 150 g
  • capers - 20 g
  • garlic - 1-2 cloves
  • lemon juice - 8 g
  • mustard - 8 g

STEP-BY-STEP COOKING RECIPE

Step 1
Preparation of tuna mousse: all the ingredients are well blended and filtered through a sieve. Pour 200 g of cream into a siphon and fill with gas. The mousse is ready.
Step 2
Peel the chanterelles, rinse from the sand and fry until tender.
Step 3
Cut out circles from the spring roll dough and fry in vegetable oil until crisp.
Step 4
Slice very thinly into pastrami. Warm her up.
Step 5
Cut the radish into thin slices.
Step 6
Move the lettuce leaves with the radish and season with soy sauce, olive oil, grape seed oil and put on a plate. Place the warmed pastrami on top. Put spring roll chips on the pastrami, hot fried chanterelles on top and siphon tuna mousse on top. Decorate with radish circles and lettuce leaves.
