Salad with hummus, pumpkin and baked apple

This apple and pumpkin salad requires some preparation but is generally easy to prepare. By the way, hummus, which is used as a salad dressing, can be prepared with a margin and served as a separate snack or used to prepare other dishes.

Ingredients
  • medium-sized pumpkin - 1 pc.
  • green apple (preferably Granny Smith variety) - 2 pcs.
  • nut - 200 g
  • garlic - 2 cloves
  • tahini sesame paste - 60 g
  • lemon fresh - 40 g
  • olive oil - 40 ml
  • orange fresh - 20 ml
  • sugar syrup - 40ml
  • mint, dill, basil - a couple of twigs
  • salt, pepper to taste

STEP-BY-STEP COOKING RECIPE

Step 1
Cut the pumpkin with the peel into slices, peel the seeds and bake in the oven with herbs, olive oil, salt and pepper at 180-200 ° for 45 minutes.
Step 2
Wrap the apples in foil and bake in the oven for 25-30 minutes at 180 °. Peel and seed off the finished apples.
Step 3
Soak the chickpeas in water for a day, strain and cook for 30 minutes, until the peas are completely soft. Allow the finished peas to cool completely.
Step 4
Prepare hummus. Punch chickpeas in a blender with sesame paste, olive oil (20 ml), lemon juice (20 ml), chopped garlic, salt and pepper.
Step 5
Mix baked apple pulp and hummus in a 2 to 1 ratio (100 g peeled baked apple and 50 g hummus). Place the whole pumpkin wedge, apple hummus on a plate, garnish with fresh mint, basil and dill. Top with sauce of olive oil, lemon juice, orange juice and sugar syrup.
