- 2 shallots
- 5 large tomatoes
- 200 g seedless grapes
- 3 cloves of garlic
- 5 tbsp. l. olive oil
- 100 g walnuts
- 1 bunch of cilantro
- 1 tsp Tabasco sauce
- 1 chicken (weighing 1 - 1.3 kg)
STEP-BY-STEP COOKING RECIPE
Peel the onion, chop finely. Cut the tomatoes into small cubes, Squeeze the juice from the grapes. Pass the garlic through a press or chop finely. (using a kitchen machine, all this can be done in just minutes).
Heat 3 tablespoons in a skillet. olive oil, put onion and garlic in a frying pan and fry on medium heat until golden brown. Add tomatoes and pour in grape juice. Boil for 15 minutes, stirring constantly.
Add chopped walnuts, chopped cilantro (leave a little for serving) and tabasco. Stir and remove the sauce from the stove. After letting the burner cool slightly, you can leave the sauce on the stove, using the residual heat to keep it cool.
Preheat the oven to 190 C. Wash the chicken, dry it, brush with olive oil, rub with salt and pepper. Place on a wire rack and place on the 2nd shelf of the oven; place a tray with water on the lower level. Turn on the turbo grill mode.
Roast the chicken for 50 min-1 hour. Use the core temperature probe to be sure of the result. Insert the probe longitudinally into the middle of the breast so that its end falls into the cavity and set the "Chicken" temperature probe mode. You can also use the automatic "fried chicken" mode
Remove the chicken from the oven and cut into portions. Arrange over serving bowls, top with sauce, garnish with mint leaves and serve.
