Scottish cheeses "Kabok"

Originally from Scotland, Cabok and Crowdy are known as "rich man's cheese" as opposed to Crowdy's "poor man's cheese." Kabok is a cream cheese made from high-fat whole milk with the addition of cream using a soft cheese starter from BakZdrav, in consistency and fat content almost like butter. Crowdy is made from skim milk. Both cheeses are "sausages" or cylinders topped with naked oats.

Ingredients
  • whole milk 2 l
  • cream 20% and above 250 ml
  • sourdough "Soft and pickled cheeses" BakZdrav According to the instructions
  • whole or chopped naked oats ~ 8 tbsp.
  • salt, pepper if desired (for sprinkling)
  • skim milk 2 l

STEP-BY-STEP COOKING RECIPE

Step 1
Cooking Crowdy. We heat the skim milk to 90 ° С, stir, do not let it boil.
Step 2
Preparing the sprinkling. To do this, rinse the naked oats (if whole, then chop it a little in a blender or coffee grinder), put it on a baking sheet covered with parchment or on a silicone mat. We bake in the oven for about an hour at 150 ° C until a pleasant golden color. Stir occasionally to bake evenly.
