Spicy vegetable soup with meat hedgehogs
Autumn has come with rains and cold weather. I already want to warm up with spicy hot meat food. Spicy vegetable soup with meatballs is great for this occasion.
- minced meat 400 g
- rice 150 g
- onion 2 pcs.
- chicken egg 1 pc.
- tomato paste 1 tbsp
- salt 1 tsp
- bell pepper 1 pc.
- carrots 1 pc.
- celery root 100 g
- broth (or water) 1.8 l
- fresh tomatoes 200 g
- potatoes 400 g
- marjoram 0.5 tsp.
- ground chili pepper 0.25 tsp
- chopped greens to taste
STEP-BY-STEP COOKING RECIPE
Let's start by making hedgehogs. Add finely chopped onion, washed rice, egg, tomato paste and salt to the minced meat. Knead well and shape the meatballs to the size of medium tangerines.
Fry the meatballs in a skillet over high heat on all sides for 5 minutes. Then transfer to a plate.
Cut the onions into half rings, sweet bell peppers into strips.
Cut the peeled carrots in half lengthwise, then cut into thin slices. Chop the peeled celery root in the same way.
In a saucepan with a thick bottom, heat one spoonful of vegetable oil and put onions and bell peppers.
Fry, stirring continuously for 5-7 minutes.
Add fresh tomatoes, cut into pieces. You must first remove the skin from them.
Then add broth (or water). Bring the soup to a simmer and then add the carrots, celery root, marjoram, chili powder (adjust to taste) and salt in a saucepan. Bring to a simmer and then add the fried meatballs. Cook for about 5 minutes.
Now it remains to add the diced potatoes and cook for another 15-20 minutes.
Spicy vegetable soup with meat hedgehogs is ready. Before serving, it is good to add chopped herbs to the plates to your liking. I add cilantro and dill. Enjoy your meal!
