Strawberry strachatella

This unusual berry dessert is perfect for a romantic or Sunday breakfast. It will take time to prepare, but the result will impress you.

Strawberry strachatella
Ingredients
  • strawberries - 40 g

  • vegetable oil - 200 ml
  • balsamic cream - 70 g
  • agar-agar - 1 g
  • raspberry - 30g

  • sugar - 7 g
  • gelatin - 2 g
  • dry protein - 1 g

STEP-BY-STEP COOKING RECIPE

Step 1
For berry "clouds". Melt the gelatin in a water bath, adding water to it in a 1: 3 ratio. Beat the melted gelatin, sugar and berries on high speed until fluffy, fluffy.
Step 2
For balsamic "caviar". Put the vegetable oil in the freezer for 3 hours. Mix balsamic cream and agar-agar and bring to a boil, let cool for 5 minutes. Pour the mixture into a syringe, pour the balsamic into cold oil drop by drop. Using a slotted spoon, collect the pearls, rinse in a container with cold water.
Step 3
Make strawberry puree. Place the strachatella on a plate, top with chopped fresh strawberries with strawberry puree, garnish with berry clouds and a sprig of mint, pour with olive oil and balsamic sauce, then garnish with balsamic caviar.
