Stuffed tubes

What happens when you combine Italian canolis and our favorite protein cream straws? You will get a cake from which it is impossible to tear yourself away. We baked puff pastries and filled them with delicious ricotta and chocolate filling. Repeat after us!

Stuffed tubes
  • 500 g of puff unleavened dough
  • 1 egg
  • 100 g of chocolate
  • 1.5 tsp. vegetable oil
  • 1/2 cup chopped pistachios
  • 400 g ricotta
  • 2/3 cup caster sugar
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 50 g of chocolate

  • powdered sugar


Step 1
Line a colander with gauze so that the edges hang down. Place the ricotta in a colander, cover with the ends of the cheesecloth and place in a saucer. Place the weight and leave for 2 hours to glass the whey.
Step 2
Place the ricotta in a mixer bowl, add the powdered sugar, vanilla extract and cinnamon and beat on low speed until the powdered sugar is completely dissolved, 1–2 minutes. Chop the chocolate finely and add to the ricotta, stir. Transfer the filling to a container and refrigerate for 12 hours.
Step 3
Preheat oven to 200 ° C. Beat the egg lightly with 1 tbsp. l. water. Cut the puff pastry into strips 1.5 cm wide. Prepare 6 metal cones or baking tubes sprinkled with vegetable oil. Starting at the sharp end, wrap the dough strip around the metal cone in a spiral, then brush the end of the strip with an egg and connect to the second strip of dough. Wrap to the end of the form. Brush the surface of the dough with an egg and place on a parchment-lined baking sheet.
Step 4
Bake the tubes 15 minutes, until golden brown. Cool completely and then carefully remove the tubes from the molds.
Step 5
Prepare chocolate for decoration. Break up the chocolate, add vegetable oil and melt in the microwave, 10 sec. Stir. Dip the edges of the tubes in melted chocolate and sprinkle with chopped pistachios. Transfer to a piece of parchment and set aside. Save the remaining chocolate for serving.
Step 6
Fill the rolls with the ricotta filling.
Step 7
Serving. Place in a straw on a plate. Melt the remaining chocolate in the microwave and transfer to a plastic bag, cut off a corner and draw fine lines over the straw. Add berries and dust with powdered sugar.
