Jamie Oliver's Awesome Beets

Ingredients
- 600 g young beets of different colors, preferably with leaves
- 4 sweet tangerines
- ½ a bunch of tarragon (15 g)
- 100 g loose goat cheese
- 40 g shelled walnuts
STEP-BY-STEP COOKING RECIPE
Step 1
Cut the larger beets in half and leave the smaller ones intact. Boil in boiling salted water for 15–20 minutes, until soft (set aside the leaves).
Step 2
Meanwhile, squeeze the juice of 1 tangerine into a bowl, mix it with 1 tablespoon. extra virgin olive oil, pour in a little red wine vinegar. Peel leftover tangerines, cut into thin slices, and place on bowls.
Step 3
Drain the beetroot pot, cool it under running cold water, remove the skin.
Step 4
Cut a few beets into slices, toss all the beets with the tangerine dressing. Season to taste with salt and black pepper, add tarragon and beet leaves. Arrange on bowls, crush cheese and walnuts on top, drizzle with extra virgin olive oil.
