Pancakes with yeast and cream
Ingredients
- 25 g fresh or 12 g dry yeast
- 1 tbsp sugar
- 400 g flour
- 700 ml cream, 20% fat
- 50 g butter
- 4 eggs
- 0.5 tsp salt
STEP-BY-STEP COOKING RECIPE
Step 1
Dissolve the yeast in half a glass of warm water with a pinch of sugar and let it work, 5-10 minutes. - bubbles should appear.
Step 2
Dissolve half the flour in a large bowl with 300 ml of cream, salted with half of the salt, add the prepared yeast, stir the dough until smooth (it should be similar in thickness to sour cream). Cover the bowl with a clean napkin and leave in a warm place for the dough to come up, 1 tsp.
Step 3
Melt the butter and cool slightly. Separate the egg whites from the yolks. Mash the yolks with sugar, set aside the whites for now.
Step 4
When the dough rises, add butter, yolks, remaining cream to it and add the remaining flour.
Step 5
Stir the dough well and let rise again, 30 minutes. Whisk the whites with the remaining salt into a firm foam. Add the whipped egg whites to the dough, stirring gently from bottom to top.
Step 6
Immediately fry the plump pancakes in a preheated and oiled frying pan, preferably cast iron. Place prepared pancakes in a saucepan and keep hot, covered.
