Pie with vegetables, goat cheese and figs
Greetings from sunny Bulgaria, dear culinary specialists! While here, I try to cook local cuisine. So today I have a pie with seasonal vegetables, goat cheese and figs. Ketchup "Maheev" had, of course, to look, but the result was worth it. The vegetables were marinated with ketchup and turned out to be spicy, figs added sweetness to the filling, and goat cheese was salty. My pie is designed for a large company, a baking sheet with a diameter of 30 cm.
- filo dough 300 g
- large eggplant 1 pc.
- large champignons 4 pcs.
- garlic cloves 4 pcs.
- bell pepper 1 pc.
- ketchup "Maheev" tomato 260 g
- young figs 7 pcs.
- goat cheese 80 g
- onions 1 pc.
- dill 1/2 bunch
- large chicken eggs (filling) 2 pcs.
- mayonnaise (pouring) 1.5 tbsp.
- ketchup "Maheev" Russian 2 tbsp
- salt, pepper To taste
STEP-BY-STEP COOKING RECIPE
We will prepare everything you need for the filling.
Cut eggplant and champignons into slices, onions in half rings.
Cut the bell pepper into half rings, the figs into quarters, chop the dill, cut the garlic into slices.
Fry eggplant, champignons, onions in a small amount of olive (or vegetable) oil until soft.
Add 200g of Maheev tomato ketchup, mix and remove from the stove.
Add bell pepper, figs, garlic and dill. Pepper and salt to taste. We cool the filling.
Preparing the filling for the cake. Break 2 eggs into a bowl, add mayonnaise and ketchup Russian "Maheev". We mix.
We collect the cake. On a baking sheet, greased with olive oil, place 3 sheets of filo dough, slightly overlapping.
Put half of the filling on the dough.
Place 2 sheets of filo dough, half goat cheese on the filling and sprinkle with tomato ketchup "Maheev". We repeat once again the layers of dough and filling of vegetables and cheese.
Raise the edges of the dough up, put a sheet of filo dough in the center, slightly squeezing.
Pour the top of the cake with fill.
We bake the cake for 40 minutes at 190 ° C. Take the finished cake out of the oven and cool.
Cut into portions and serve. Delicious both warm and cold.
