Protein omelet with green beans, onions and tomatoes
  • 6 egg whites
  • 200 g frozen green beans
  • 1 large tomato
  • 1 large onion
  • 2 cloves of garlic
  • 2 tbsp. l. extra virgin olive oil
  • freshly ground black pepper
  • salt, optional


Step 1
Peel the onion and garlic, cut into thin circles. Cut the tomato into medium slices.
Step 2
Whisk the whites until fluffy, pepper and salt if desired.
Step 3
Place a non-stick skillet over medium heat, add oil, add onion, sauté, 3-4 minutes.
Step 4
Add garlic and beans, sauté 2 minutes more. Arrange the tomatoes so that they lie directly on the bottom of the pan, fry for 2 minutes.
Step 5
Turn the tomatoes over and pour in the protein immediately. Reduce heat and cook, stirring the protein mass slightly until it sets well, 3 minutes. Pepper the omelet and serve.
